মাছ সমুদ্র থেকে ধরা পরার পরই যেন কোন কেমিক্যাল ট্রীট্মেন্ট এর শিকার না হয় সেটা খেয়াল রাখে।
দ্বিতীয়ত, বালির উপর রোদে না শুকিয়ে, সম্পুর্ন ঝুলানো অবস্থায় রোদে শুকানো হয় তাতে ময়লা হবার সম্ভাবনা কমে যায়।
তৃতীয়ত, যেন মাছি বা অন্যান্য ক্ষতিকর পোকা ডিম না পাড়তে পারে, সেজন্য পলিথিন বা অন্যান্য মশারী দিয়ে ঢেকে দেয়া হয় শুটকি তৈরী কালিন সময়, এজন্য এতে পরবর্তী পর্যায়ে জীবানু সংক্রমন এর হার নিয়ন্ত্রন করা হয়।
এরপর পুরা শুটকি ফ্রোজেন অবস্থায় সংরক্ষন করা হয় যেন পোকা না ধরতে পারে।
